I've been craving salsa lately but since I can't eat tomatoes I've been out of luck. I researched tomatillos and discovered that they aren't in the tomato family..score! I had bought some tomatillo salsa from Trader Joe's and I tried a tiny bit & waited to see if would have a reaction and when I didn't I devoured it. It was so good & definitely curbed my craving for salsa. In fact, it's still my favorite for salsa if I'm buying. And it tastes good on everything.
We have a fruit/veggie truck that comes to our work a couple times a month from CA and they sell things for really cheap. I bought some tomatillos from them & I thought I would find a recipe for tomatillo salsa. My coworker sent me a pretty basic recipe her mom uses & between her mom's recipe & the one I found on Pinterest, they were pretty similar.
I roasted my jalapeno instead of boiling it with the jalapenos. I think it brought out more of the flavor of the jalapeno that way. It wasn't as good as the one at Trader Joe's but it was pretty decent. I think when I make it next time, I'd make more and freeze them in mason jars.
Tomatillo Salsa (2 cups) (Pinterest):
10 tomatillos
1 jalapeno, stemmed, seeded and ribs removed (keep ribs & seeds if you want it hotter)
2 garlic cloves, minced
1 bunch cilantro
Salt and pepper to taste
Remove husks from the tomatillos and rinse. Place tomatillos & jalapeno (if boiling-or roast jalapeno) in pan and cover with water. Place over med-high heat and boil until tomatillos are fully cooked and a dull olive green color, about 10 min.
Strain mixture, then place tomatillos and jalapenos in a food processor. Add garlic and cilantro and process until smooth. Season to taste with salt & pepper. Enjoy!

Polenta Bruschetta
This is what I was going to make as an appetizer for Easter but I was worried they would be too filling and I'm glad I waited since they are best served hot or warm. I used the salsa from the Red Lentil Rice Cakes recipe that I posted a couple weeks ago. I also used the pre-made log of polenta. All in all, it tasted pretty good. I only used half a log this time in case I didn't like it. Like I said, it tastes better hot or warm so make sure they are eaten right away. I think I sliced my polenta too thin since I had to eat it with a fork but you can slice it to any thickness you want.
Polenta Bruschetta:
3 plum tomatoes, diced
2-3 tbsp capers
1/4 c fresh basil, sliced
1-2 tbsp balsamic vinegar
1 log pre-made polenta
1/4 c shredded cheese, any flavor, optional
Garlic powder, to taste
Pepper, to taste
Preheat oven to 350. Line a rimmed baking sheet with foil and spray with cooking spray. Slice polenta into 1-in rounds. Bake until set and crisp, 15-20 min. During last 5 min of baking, sprinkle each round with a little cheese, if using.
Meanwhile, combine tomatoes, capers, basil and balsamic vinegar in bowl and stir to combine. Let the bruschetta sit at room temp while the polenta bakes.
Once polenta is done baking, sprinkle with garlic powder and pepper. Top with bruschetta and enjoy!

Red Lentil-Rice Cakes with Simple Tomato Salsa
This recipe was HARD!! It took me a couple attempts to make this recipe. And even with the final attempt, it didn't turn out the best. Oh well, at least I attempted to make something a little more harder. The taste was pretty good, despite the mess I made with it. I ended up only making half of the cakes because I was tired of burning myself and tired of the cakes falling apart. Only about 4 of the cakes actually held their shape, otherwise I have a mess of crumbles, which I will still eat. It took me 2 attempts to make the lentils-I followed the directions for the recipe and the lentils turned into mush. When I made them tonight, I only cooked it for about half the time and they turned out much better. The salsa really makes the cakes taste amazing!
Red Lentil-Rice Cakes with Simple Tomato Salsa (Cooking Light) (6 servings):
*Salsa
3 c finely chopped plum tomatoes (about 6)
1/4 c chopped fresh basil
1 tbsp balsamic vinegar
2 tsp capers (I added 3 tsp)
1/4 tsp salt
*Cakes
4 c water, divided
1 c dried small red lentils
1/2 c uncooked basmati rice
2 tbsp olive oil, divided
1/2 c finely chopped red bell pepper
1/2 c finely chopped red onion
1/2 tsp fennel seeds, crushed
2 garlic cloves, minced
3/4 c shredded mozzarella cheese
1/4 c dry breadcrumbs
1 tbsp chopped fresh basil
1 tsp salt
1/4 tsp pepper
2 large egg whites, lightly beaten
To prepare salsa, combine all ingredients; set aside at room temp.
To prepare cakes, bring 3 c water and lentils to boil in med saucepan. Reduce heat and simmer about 10 min or until tender. (This is the time I used and I made sure to watch the lentils carefully during the last couple of minutes to make sure they weren't over-done.) Drain and rinse with cold water; drain. Place lentils in large bowl.
Combine remaining 1 c water and rice in pan; bring to boil. Cover, reduce heat and simmer 18 min or until liquid is absorbed. Cool 10 min. Add rice to lentils.
Heat 1 tsp oil in large skillet over med-high. add bell peppers, onion, fennel seeds and garlic to pan; saute 2 min or until tender. Cool 10 min. Add to lentil mixture. Add mozzarella and remaining ingredients, stirring until well combined. Let stand 10 min.
Wipe skillet clean with paper towels. Heat 2 tsp oil in skillet over med heat. Spoon half of rice mixture by 1/3 cupfuls into pan, spreading to form 6 (3-in) circles; cook 5 min or until lightly browned. Carefully turn cakes over; cook 5 min on other side. Remove cakes from pan. Repeat procedure with remaining 1 tbsp oil and remaining rice mixture. Serve with salsa.
Note: I probably should have added more egg to my mixture because my cakes would not hold together to cook. I also started forming them into flat patties with my hands toward the end and carefully placing them in the skillet. Make sure to cook the patties for the full 4-5 min or they will fall apart when you try to flip them over.
