Steak & Whipped Bleu Cheese Tacos

I've had this recipe pinned on Pinterest awhile now and after I found a bag of steaks in my freezer I decided I should finally try it. I sliced the steak into thin slices when it was almost done thawing out and put them in a bag of olive oil, a little Ponzu sauce & Montreal steak seasoning to marinate overnight. While blending the bleu cheese, I wasn't too sure about it...it stunk a lot!!! And I love bleu cheese! It also didn't taste the best on it's own. So I wasn't too sure how the tacos would taste. But once I combined everything together, the overall taste of everything was really really good. I think the next time I make these, I'll make 2 steaks & I'll caramelize 2 onions.

Beef Taquitos

I found this recipe on Pinterest via www.thefrugalgirls.com. The recipe sounded simple enough and I've always loved taquitos. And I liked that I could bake these instead of frying them, which is so much healthier! The recipe called for 1 c salsa to add to the filling mix, but that didn't sound good to me so I left the salsa out of the filling and served it on the side. And I didn't notice the difference. I also sprinkled some table salt on mine before I baked them and the saltiness added to the flavor of the taquitos. After the taquitos baked, I sprinkled some cheese to melt over them as well. I'll definitely make these again!

Beef Taquitos:

1 tbsp veggie oil, plus more for brushing on the taquitos
1 medium onion, finely chopped
1 clove garlic, minced
3/4 lb ground beef
1 c salsa, plus more for dipping
2 tsp chili powder
1/2 tsp salt
1/4 tsp pepper
10 (6-inch) flour tortillas
1/2 c shredded cheddar cheese, plus more to sprinkle on top
Sour cream, to serve

Heat oven to 400. Heat oil in skillet over medium heat. Add onion and garlic and cook 3 minutes, stirring often. Add beef and use a wooden spoon to break it up while it cooks, until it's no longer pink, about 3 minutes. Drain off fat. Return to skillet and add the salsa, if using, the chili powder, salt and pepper. Cook the mixture over low heat, stirring occasionally, for 10 minutes.

Place the tortillas on a plate and cover them with damp paper towels. Microwave them until warm and pliable, about 45 seconds. Top each tortilla with 1/4 cup of the beef mixture, spreading it to an inch from the edges. Sprinkle cheese evenly over the beef. Roll up the tortillas and place them on a foil-lined baking sheet with the seam sides down. Brush the tortillas with veggie oil, sprinkle with salt if using, and bake them until the filling is heated through and the tortillas are lightly browned, about 8-12 minutes. Sprinkle with additional cheese to melt over them, is using.

Serve them hot with additional salsa and/or sour cream. Enjoy!

Ground Beef Chimichangas

I found this recipe on Pinterest via www.food.com I have always liked chimichangas and there was a local bar that used to serve them late at night. The ones I ate didn't have a lot of flavor for the filling so I swore if I ever made them, I'd add more to the filling. I found these on Pinterest and they sounded pretty decent. I made them tonight actually and they tasted really good. My friend ate some too and he's a super picky eater but he said they were "the bomb" lol so I guess they were a hit! I bought a 10 pack of tortillas and it made plenty. I used a can of chopped chiles instead of the can of tomatoes and I sprinkled some cheese on top of the chimichangas. I'm freezing the leftovers but I'm happy with them! I'll definitely make these again!

Ground Beef Chimichangas (6 servings) (www.food.com):

1 lb ground beef
1 onion, finely chopped
1 can chopped chiles (or 1 10 oz can of tomatoes)
1 envelope taco seasoning
1 c grated cheddar cheese, more for melting on the chimichangas
2 garlic cloves, chopped
1/2 tsp pepper
10 burrito-size flour tortilals (the recipe calls for 12 count)

Heat oven to 350. Spray a 13x9-inch glass baking dish with cooking spray. Brown ground beef and drain well. Stir in onion and saute. Stir in chiles (or tomatoes), taco seasonig, garlic, and pepper. Simmer over low heat for 15 minutes. Remove from heat and add the cheese; mix well.

Spoon 1/4 c meat mixture along one edge of a tortilla. Fold the edge of tortilla to cover the meat; fold in the sides and roll and secure to form a small purse. Repeat with the rest of the tortillas. Place in prepared dish and spray the chimichangas with cooking spray. Bake until golden, about 20-25 minutes. Sprinkle with additional cheese if desired and let cook an additional 3-5 minutes.

Serve chimichangas with your desired toppings.
