Steak & Whipped Bleu Cheese Tacos

I've had this recipe pinned on Pinterest awhile now and after I found a bag of steaks in my freezer I decided I should finally try it. I sliced the steak into thin slices when it was almost done thawing out and put them in a bag of olive oil, a little Ponzu sauce & Montreal steak seasoning to marinate overnight. While blending the bleu cheese, I wasn't too sure about it...it stunk a lot!!! And I love bleu cheese! It also didn't taste the best on it's own. So I wasn't too sure how the tacos would taste. But once I combined everything together, the overall taste of everything was really really good. I think the next time I make these, I'll make 2 steaks & I'll caramelize 2 onions.

Breakfast Egg Bake Casserole

I first had this recipe when my coworker made it one morning for her intern/student's last day in PT. When she made it, it was soooo good! So of course I asked her for the recipe and how to make it. And it was super easy so eventually I made it. I added some meat to mine and some onions. But you can pretty much add whatever you want to it. And I ended up freezing over half of it because it makes a lot.

Breakfast Egg Bake Casserole (Sondi's Mom's Recipe) (12 servings):

12 eggs
1 carton cottage cheese (I used the large carton)
7 oz can diced green chiles (hot or mild)
1 lb shredded Monterey Jack cheese
1 pkg pancetta
1 onion, diced
1/3 c melted butter

Preheat oven to 350.

Mix the first 6 ingredients together. I didn't use all of the cottage cheese, maybe about 3/4 of the container. I eyeballed it. Same with the Monterey Jack cheese-about 3/4 of the bag. Add the butter at the very end-make sure it's not too hot that the eggs won't curdle when you add it. Stir to combine.

Grease a 13x9-inch baking dish. Pour casserole into dish & bake about 55-60 minutes or until top is browned & eggs are set. Enjoy!!

Caper Butter Halibut

I love the magazine Clean Eating. All the recipes are so healthy and fresh-I even got my mom hooked on the magazine-I think she gets a subscription of it. I was paging through last month's magazine and came across this recipe. The recipe also calls for asparagus & baby potatoes and I was going to make all that but I decided to use what was in my freezer/pantry instead to save money-I had lots of side dishes. And instead of halibut, I decided to use mahi mahi, which I found in my freezer, which happens to be my favorite fish anyways so it was a win win. I also added some lemon juice to my rub. This dish turned out pretty good. Not sure I'd use so much parsley next time but I'm not complaining about the taste at all.

Caper Butter Halibut (or Mahi Mahi) (Clean Eating) (4 servings):

2 tbsp butter, softened
2 tbsp chopped flat-leaf parsley
1 tbsp capers, drained, rinsed & minced (I may have used 2 tbsp)
1 tsp lemon zest & additional garnish (I also added some of the juice)
4 5-oz skinless halibut fillets (or cod or haddock)

Preheat oven to 375. Form a bowl from parchment (or tinfoil). In small bowl, stir together butter, parsley, capers and lemon zest (and juice if using). Sprinkle fish with remaining 1/4 tsp each salt & pepper. Spread butter mixture over fish. Add fish to bowl of parchment or tinfoil.

Place on a sheet pan and bake in oven until fish flakes easily when tested with a fork, 10-12 min. Drizzle fish with any butter mixture left in parchment and garnish with additional lemon zest.

Avocado Salmon Rice Bowl

I've been craving salmon lately & one day I decided to clean out my freezer before going shopping. It's a good thing I did because I found a small pkg of salmon, along with a big bag of salmon that needs to be eaten before the middle part of August. Guess I'll be eating salmon for a while! I saw this recipe on Pinterest and it looked really good so of course I had to try it and it was soooo good! I used bamboo rice instead of jasmine because I've had it in my pantry and never tried it before. I cooked it according to the pkg directions-not sure I like it so when I make this dish again, I think I'll use jasmine instead. The bamboo rice kind of reminds me of a cross between sticky rice & sushi rice. The way the recipe calls to make the avocado with the chili powder added to it is soooo good! In fact, I've made it that way a couple times now as the new way to make guacamole since I can't make my regular guacamole with tomatoes. I'll keep making this recipe-sooooo good!

Taco Mac

I used to LOVE Hamburger Helper as a kid, especially the cheeseburger one. If my parents were going out for the night, my mom would make it beforehand and then I would warm it up when I was ready to eat...so yum! But I also know they put lots of bad stuff in it to taste good. I have another recipe on this blog that's a homemade version of Hamburger Helper but it has salsa in it, which means I can't eat it anymore so I've had to look for new recipes. I found this one and decided to try it. It was good but it tasted like it was missing something...maybe some Velveeta or now that I mention that other recipe, maybe a can of the cheddar cheese soup. I'll have to try adding that next time....
